Paneer Paratha



Ingredients

Wheat flour -1cup

Salt as req

Oil -1tsp

For stuffing

Paneer

Onion -1 

Coriander leaves few

Red chilly -1/2tsp

Turmeric powder-1/4tsp

Coriander powder-1/2tsp

Pepper powder-1/4tsp

Jeera -1/2 tsp 

Ginger garlic paste -1/2 tsp

Method

1. Mix flour,salt,oil and water.Knead the dough.

2. Crumble paneer with hand or grind it in mixer. In a mixing bowl, mix paneer,onion,chilly powder,coriander powder,pepper powder,turmeric powder,coriander leaves,ginger garlic paste,salt. Keep it aside.

3. Make small balls from the dough. Roll it out into small circle.

4. Place a stuffing in the centre. Gather and close it from all sides.

5. Now dust wheat flour and roll it gently with the stuffing.

6. Heat a tawa.cook the parathas on both sides in medium flame.Press gently to ensure even cooking while it's getting cooked.

Notes 

1. U can use green chilly instead of chilly powder

2. Make sure that there is no water in paneer.

Coriander Paratha/Green Paratha/Chapathi



Ingredients

Wheat flour-1cup

Oil

Water

Coriander leaves-1/2cup

Green chilly-1 or 2

Salt

Preparation

Grind coriander leaves,greenchilly and salt by adding little amount of water.

Method

1.Take a bowl,mix wheat flour,salt,oil and above grinded coriander.Make a dough.Dough should be soft.Let it rest for 30mints.



2.Make small balls from dough.



3.Roll it into chapathi.



4.In a pan,cook the chapathi with the desired amount of oil or ghee on both sides...



5.Serve them hot with any choice of side dish...

Note U can use ginger and garlic also...

Laccha Paratha



Ingredients

Wheat flour-1cup (take 1/4 cup for dusting)

Maida -1cup

Salt as req

Milk to knead dough or u can use warm water

Oil

Method

1.Take a bowl mix maida,wheat flour,salt and 1 tsp of oil.Make a dough by adding little by little milk.Dough should be soft.



2.Cover the dough with wet cloth.



3.Close with lid also.Keep aside for 1hr..



4.After that again knead the dough and make a small ball from dough.



5.Roll it into big circle.Apply a tsp of oil evenly on the top.Sprinkle a tsp of flour and spread it evenly..Start folding from one end like saree pleats.



6.Then slightly tap the dough by holding the ends so that it would elongate more.



7.Next again fold it like a swiss roll.





8.Repeat the same for remaining balls.



9.Place it on a plate and cover it with a wet cloth for 30mints.



10.After that dust it with dry flour and roll it gently.

11.Put this on heated tawa.When small bubbles will appear on the top sides of paratha,then flip it and apply oil on that side.Cook on medium flame..

12. Then again turn it to the other side and apply oil.

13.Cook thoroughly...

14.Serve with any curries.I made kolhapuri chicken...

Oats Stuffed Paratha



Ingredients

Wheat flour-1cup

Oats-1/2cup

Chillypowder-1/2tsp

Turmeric powder-1/4tsp

Coriander powder-1/2tsp

Salt as req

Curry leaves-few string

Coriander leaves-few

Water as req

Oil/ghee as req

Preparation

For Dough

Take a bowl mix wheat flour,salt,2tsp of oil and water.Make a dough.Dough should be soft.keep aside it for 30mints.

For stuff

Take abowl,add oats,coriander leaves,curry leaves,chilly powder,turmeric powder,coriander powder(u can use chaat masala) mix well by adding little by little water.This is the stuff.Make small balls from this..

Method

1.Divide a dough into equal portions.

2.Flatten the dough and fill the stuff and seal it.

3.Now roll it into a paratha of desired thickness on a floured surface.

4.Cook it on both sides.Drizzle a tsp of oil..

5.Serve it with any curries..

Dal Paratha


Ingredients

Wheat flour-1cup

Method
1.Mix wheat flour and dal fry.

2.Make a dough.Dough should be soft

3.keep aside for 15 to 20 mints or u can make it immediately.

4.Make a small balls from the dough.

5.Dip it in dry wheat flour and start rolling out into thin circles..

6.Toast in tawa on both sides...

7.Dal paratha was ready to eat...

Egg Paratha


Ingredients

To Dough

Wheat flour-1cup

Warm Water

Milk-2 or 3 tsp(Optional)

Salt

To Egg Mixture

Egg-1

Green chilly-1 small finely chopped

Coriander leaves-few finely chopped

Salt to taste

Pepper Powder -1/2tsp


Oil or butter

Chilly powder-A Pinch

Method

1.Prepare dough…Dough should be soft without cracks….keep aside for 15 to 20mints.

2.Beat the egg in a bowl.Add green chilly,coriander leaves,salt and pepper powder to the egg…Whisk the mixture well.

3.Make small balls from the dough,Flatten them.Sprinkle some oil,chilly powder(A pinch only) and flour and fold it into half.

4.Again smear oil..fold it again into half(form small triangle).

5.Roll it again lightly to form a large triangle(Need to separate the layers for egg filling)

6.Heat a tawa and roast the paratha on both sides lightly.

7.Open up the top layer of paratha with the help of knife.(Its like pocket).

8.Pour the egg mixture into it.

9.Spread oil on top.Cook for sometime

10.Gently filp the paratha to the otherside.

11.Cook parathas until egg is cooked

12.Serve hot.

Note

1.U can use chaat masala in egg mixture..

2.Egg will spill over through the center and that’s no pblm..dont worry abt tat

Egg Kothu Parotta



Ingredients

Parotta-3

Onion-1

Tomato-1

Green chilly-2

Capsicum-1/2

Turmeric Powder-1/2tsp

Curry Leaves-1spring

Coriander leaves-few

Pepper Powder-1tsp

Chilly Powder-1/4tsp (U can use any spicy masala chicken masala or anything or use pepper powder only)

Chicken gravy-1/2 cup

Salt to taste

Cloves, Cinnamon or Fennel seeds

Method

1.Shred the parottas into irregular strips and keep it aside..

2.Beat the eggs with salt or u can add directly

3.Heat a oil in pan,add cloves,cinnamon followed by curry leaves.Then add onions and green chillies and sauté till it turns a golden brown

4.Add ginger garlic paste and stir it for few sec s and add tomato.Fry until tomato are smashed..

5.Add turmeric powder,chilly powder,pepper powder and salt…Saute for few mints

6.Add parotta and fry for a mint..Now add beated egg(or directly add egg).Mix everything together…

7.When the egg Is almost done add gravy (I didn’t add gravy).Mince by using two heavy iron spatulas until everything is well mixed.

8.Add Coriander leaves…

9.Server hot and enjoy!!!!

Parotta


Ingredients

Maida-1cup

Milk-1cup or a req

Baking Powder-a pinch

Salt

Oil 1tp,while kneading the flour

Method

1.Knead the maida using milk,salt,oil,baking powder to a dough

2.Dough should be soft

3.Knead with beating and punching to get a smooth dough

4.Close the bowl with it lid and keep it for 30-45mins



5.Make a balls from dough(without any cracks) and roll it.

6.After rolling,brush the top of the rolled dough with little more oil and then brush the top with little maida

7.Using a knife,slit into long ribbon like strips.

8.From centre strip is long strip.Take left strip and placed upon the center then right…



9.Fold it.Then roll it Softly

10.Heat the pan and apply a little oil over the surface.Peel off the parotta and place it on the hot tawa

11.Flip it again and again to get it cooked evenly

12.Take out.After taking from the pan,beat the parotta with both hands for releasing the layer of parotta.

13.Serve hot with any gravy…
